Due to numerous people's intense love for my top secret Couscous salad, I've decided to share the recipe. This is a great summer dish, especially if you tend to host one dinner party after another. Just fluff it up with some fresh veggies once in a while and it'll be fine. My last (double) batch lasted 6 dinner parties.
Recipe for Lauren’s Everlasting Tabbouleh
1. Cook couscous using water and a little olive oil. Let cool.
2. Wash, Slice/halve/squeeze/crumble, Add:
a. Persian cucumbers
b. Heirloom cherry tomatoes
c. Feta cheese
d. Green onions
e. Parsley (a lot or a little, depending on your love for parsley)
f. Lemon juice (1 or 2 small lemons)
3. Eat
4. Store leftovers in fridge in an airtight container until your next dinner party.
